Beefy Melt Burrito

by

Cheesy, Hearty, and Packed With Tex-Mex Comfort

There are some meals that feel less like food and more like a memory — the kind that wrap around you the way a soft blanket does on a long day. Whenever I needed a little comfort after school, my dad would whip up something just like this. Cheesy, hearty, a little messy in the best way… every bite felt like a warm hug from the inside. 💛 The Beefy Melt Burrito is exactly that kind of recipe: melty cheddar, creamy nacho cheese, and perfectly seasoned beef tucked inside a warm flour tortilla. It’s pure Tex-Mex comfort, simple enough for weeknights and delicious enough to make again and again.

🧾 Ingredients

For the Filling

  • 450 g ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup nacho cheese sauce

For the Tortilla & Add-Ons

  • 4 large flour tortillas
  • ½ cup sour cream
  • ½ cup diced tomatoes
  • ¼ cup diced onions
  • ¼ cup sliced jalapeños

👨‍🍳 Preparation

1. Brown the Beef

Heat a skillet over medium heat and cook the ground beef, breaking it into small pieces. Once browned, drain excess fat.

2. Season to Perfection

Add the taco seasoning and the amount of water specified on the packet. Stir and simmer until thickened and the flavors blend beautifully.

3. Warm the Cheese

Heat the nacho cheese sauce until smooth and runny. (Homemade sauce works wonderfully too.)

4. Build Your Burritos

Lay a flour tortilla flat.
In the center, create layers of:

  • seasoned beef
  • shredded cheddar
  • warm nacho cheese

Add sour cream, tomatoes, onions, and jalapeños if you want extra brightness and heat.
Fold the sides inward and roll from the bottom tightly.

5. Heat Them Up

Skillet Method (for crispy edges):
Place burritos seam-side down in a lightly greased skillet. Cook 2–3 minutes per side until golden and melted inside.

Oven Method (soft & melty):
Bake at 175°C (350°F) for 10–15 minutes.

6. Serve & Enjoy

Slice in half and serve hot with extra nacho cheese sauce, sour cream, salsa, or guacamole.
