Raspberry Swirl Sweet Rolls
Ingredients:
For the Dough:
3 cups all-purpose flour
1/4 cup granulated sugar
1 packet (2 1/4 tsp) active dry yeast
1/2 tsp salt
1/2 cup warm milk (110°F)
1/4 cup unsalted butter, melted
1 large egg
For the Raspberry Filling:
1 cup fresh or frozen raspberries
1/4 cup granulated sugar
1 tsp cornstarch
For the Cream Cheese Glaze:
4 oz cream cheese, softened
1 cup powdered sugar
2 tbsp milk
1/2 tsp vanilla extract
Directions:
Make the Dough: In a large mixing bowl, combine the flour, sugar, yeast, and salt. Add the warm milk, melted butter, and egg. Mix until a soft dough forms. Knead the dough on a floured surface for 5–7 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm place for 1 hour or until doubled in size.
Prepare the Raspberry Filling: In a small saucepan over medium heat, combine the raspberries, sugar, and cornstarch. Cook, stirring frequently, until the mixture thickens. Let it cool completely.
Assemble the Rolls: Roll out the dough into a rectangle approximately 12x15 inches. Spread the cooled raspberry filling evenly over the dough, leaving a small border around the edges. Roll the dough tightly into a log and slice into 12 equal pieces. Place the rolls in a greased 9x13-inch baking dish. Cover and let rise for another 30 minutes.
Bake: Preheat the oven to 350°F (175°C). Bake the rolls for 20–25 minutes or until golden brown. Allow to cool slightly.
Make the Glaze: In a mixing bowl, beat together the cream cheese, powdered sugar, milk, and vanilla extract until smooth. Drizzle over the warm rolls before serving.
