Instructions
Step 1: Sauté Bacon and Onion
In a skillet over medium heat, cook the chopped bacon and onion together
until the bacon is crisp and the onion is tender. Drain any extra fat
before moving on.
Step 2: Combine in Slow Cooker
Transfer the cooked bacon and onion to your slow cooker. Add in the
chicken broth, water, diced potatoes, salt, dill, and white pepper. Stir
gently, cover, and cook on Low for 6 to 7 hours, giving it a stir now and then.
Step 3: Add Creamy Goodness
In a separate bowl, whisk the flour into the half-and-half until there
are no lumps. Stir this into the soup along with the evaporated milk.
Step 4: Final Cook & Serve
Re-cover the slow cooker and cook for an additional 30 minutes, or until the soup thickens to your liking. Serve hot, with extra bacon crumbles or shredded cheese on top if desired.
