Stuffed eggplants

Preparation of Stuffed Eggplants

4 eggplants
4 to 5 tablespoons  olive oil
Paprika, to taste
Salt and pepper to taste
500g lean ground beef
3 tomatoes
1 red bell pepper, diced
1 onion, chopped
200ml water
A splash of olive oil
25g tomato paste
4 cloves garlic, minced
Chili flakes (optional)
Seasonings to taste
150g grated cream cheese
2-3 sprigs chopped parsley
Preparation:

Clean, peel, and slice the eggplant lengthwise.
In a small bowl, combine  olive oil with paprika, salt, and pepper.
Arrange the eggplant slices on a baking sheet lined with parchment paper. Brush both sides with the spice-oil mixture.
Bake in a preheated oven at 200°C (approx. 400°F) for 30 minutes.
Roughly chop the tomatoes and puree them.
Heat a little olive oil in a non-stick pan. Add the chopped onion and garlic and fry until golden brown.
Add the ground beef and fry until golden brown.
Add the diced red bell pepper, then the pureed tomatoes, tomato paste, chili flakes, salt, pepper, and spices. Add water and simmer for 5 minutes.
Place half of the cooked eggplant slices on a baking sheet. Spread a portion of the cooked ground beef on each slice.
Sprinkle the filling with grated cheese and top each  stuffed eggplant slice with another slice of cooked eggplant.
Repeat with the remaining ingredients.
Bake the stuffed eggplant in a preheated oven at 200°C (approx. 400°F) for 15 minutes.
After cooking, garnish the stuffed eggplant with chopped parsley before serving.

Stuffed eggplant can be served hot, straight from the oven. It goes perfectly with a fresh salad or crusty bread. For a special flavor, you can also serve it with yogurt or a light vinaigrette.
