Tortilla Wraps with Ground Beef

A quick, flavorful weeknight meal: seasoned ground beef, crisp veggies, melted cheese and tangy salsa wrapped in warm tortillas. Ready in 30 minutes!

Ingredients (4 servings)

  • 1 lb (450 g) ground beef (80/20 or leaner)
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 bell pepper (red or green), diced
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • ½ tsp smoked paprika
  • ¼ tsp cayenne pepper (optional)
  • Salt & pepper, to taste
  • 4–6 flour tortillas (8–10″/20–25 cm)
  • 1 cup shredded cheddar or Monterey Jack cheese
  • ½ cup salsa or pico de gallo
  • Optional toppings: sour cream, sliced avocado or guacamole, chopped cilantro, lime wedges

Equipment

  • Large skillet or frying pan
  • Spatula
  • Knife and cutting board
  • Cheese grater (if shredding yourself)
  • Plate or warming tray

Instructions

  1. Prepare ingredients: chop onion, bell pepper, garlic; shred cheese; warm tortillas in microwave or oven.
  2. Heat oil over medium-high heat in a large skillet. Add onion and bell pepper; sauté 3–4 minutes until softened.
  3. Add garlic; cook 30 seconds until fragrant.
  4. Add ground beef; break up with spatula. Cook 5–7 minutes until no longer pink.
  5. Drain excess fat if necessary. Season with chili powder, cumin, paprika, cayenne (if using), salt & pepper. Stir to combine and cook 1–2 more minutes.
  6. Reduce heat to low. Lay tortillas flat, spoon ¼ of beef mixture down center of each. Top with shredded cheese and a spoonful of salsa.
  7. Fold sides of tortilla in, then roll tightly from bottom to top. Place seam-side down in skillet or on baking sheet just to melt cheese, 1–2 minutes per side.
  8. Remove wraps, slice in half if desired. Serve with sour cream, avocado, cilantro and lime wedges.

Notes & Tips

  • For extra flavor, sauté a few chopped jalapeños with the onions.
  • Use corn tortillas for a gluten-free option; warm in a skillet to prevent cracking.
  • Make it ahead: prepare beef mixture and store in fridge up to 2 days; assemble and warm before serving.
  • Leftovers keep well; reheat in a skillet or air fryer for best texture.

Variations

  • Chicken Wraps: swap ground beef for shredded rotisserie chicken, toss with taco seasoning.
  • Vegetarian: use crumbled tofu or cooked black beans instead of meat.
  • Breakfast Style: scramble eggs with beef or bacon, add cheese and salsa.
  • Asian Fusion: replace spices with hoisin sauce, add shredded carrots, cabbage and sriracha mayo.
