Cheesy Pizza Tortilla

Ingredients

  • 2 large flour tortillas
  • 4 tbsp pizza sauce
  • 1 cup shredded mozzarella cheese
  • ½ cup shredded cheddar cheese
  • 6–8 slices pepperoni (optional)
  • 1 tbsp olive oil or melted butter
  • Pinch dried oregano or Italian seasoning
  • Fresh basil leaves, for garnish (optional)

Equipment

  • Nonstick skillet or frying pan
  • Spatula

Instructions

  1. Prep the tortillas: Lay both tortillas flat on a clean surface. Brush one side of each tortilla lightly with olive oil or melted butter. This will help them crisp up.
  2. Assemble the first tortilla: Flip one tortilla so the oiled side faces down. Spread 2 tbsp pizza sauce evenly over the top. Sprinkle half the mozzarella and half the cheddar over the sauce. Arrange pepperoni slices if using. Finish with a light sprinkle of dried oregano.
  3. Top and seal: Place the second tortilla on top, oiled side up, pressing gently around the edges to seal.
  4. Cook on the stove: Heat your skillet over medium heat. Carefully transfer the assembled tortilla to the pan. Cook for 2–3 minutes, until the bottom is golden brown and crispy.
  5. Flip and finish: Using a spatula, flip the tortilla. Cook another 2–3 minutes until the second side is golden and the cheese is fully melted.
  6. Slice and serve: Transfer to a cutting board. Let rest 1 minute, then slice into 4 or 6 wedges. Garnish with fresh basil if desired.

Tips & Variations

  • Swap pepperoni for cooked sausage crumbles, chopped veggies or ham.
  • Add a drizzle of garlic butter before cooking for extra flavor.
  • For a spicier kick, sprinkle red pepper flakes into the cheese layer.
  • Use whole-wheat or gluten-free tortillas to suit dietary needs.
