Lemon Fluff Dessert

Ingredients
- 1 (3 oz) box lemon-flavored gelatin (Jell-O)
- 1 (3.4 oz) box instant vanilla pudding mix
- 8 oz cream cheese, softened
- 1 (8 oz) container whipped topping (Cool Whip), thawed
- 2 cups boiling water
- 1 cup cold water
- Zest of 1 lemon (about 1 tsp)
- 1 Tbsp fresh lemon juice (optional, for extra tang)
- Fresh berries or mint leaves, for garnish (optional)
Instructions
- In a large bowl, dissolve the lemon gelatin in 2 cups of boiling water. Stir until completely dissolved.
- Stir in 1 cup of cold water. Cover and refrigerate until mixture is slightly thickened, about 15 minutes.
- Meanwhile, in a separate bowl, beat softened cream cheese until smooth. Add the instant vanilla pudding mix, lemon zest and lemon juice (if using). Beat until well combined.
- Fold the thawed whipped topping into the cream-cheese mixture until no streaks remain.
- Gently fold the slightly thickened gelatin into the whipped-cream-cheese mixture, mixing until uniform in color.
- Transfer the fluff into a serving dish or individual glasses. Cover and refrigerate for at least 2 hours, or until fully set.
- Garnish with fresh berries or mint leaves just before serving.
Tips & Variations
- For extra texture, fold in 1 cup of drained crushed pineapple or diced strawberries.
- Substitute lime gelatin and lime zest for a lime-flavored fluff.
- Make individual parfaits by layering fluff with fresh fruit or graham-cracker crumbs.
