Ingredients

  • 1 (3 oz) box lemon-flavored gelatin (Jell-O)
  • 1 (3.4 oz) box instant vanilla pudding mix
  • 8 oz cream cheese, softened
  • 1 (8 oz) container whipped topping (Cool Whip), thawed
  • 2 cups boiling water
  • 1 cup cold water
  • Zest of 1 lemon (about 1 tsp)
  • 1 Tbsp fresh lemon juice (optional, for extra tang)
  • Fresh berries or mint leaves, for garnish (optional)

Instructions

  1. In a large bowl, dissolve the lemon gelatin in 2 cups of boiling water. Stir until completely dissolved.
  2. Stir in 1 cup of cold water. Cover and refrigerate until mixture is slightly thickened, about 15 minutes.
  3. Meanwhile, in a separate bowl, beat softened cream cheese until smooth. Add the instant vanilla pudding mix, lemon zest and lemon juice (if using). Beat until well combined.
  4. Fold the thawed whipped topping into the cream-cheese mixture until no streaks remain.
  5. Gently fold the slightly thickened gelatin into the whipped-cream-cheese mixture, mixing until uniform in color.
  6. Transfer the fluff into a serving dish or individual glasses. Cover and refrigerate for at least 2 hours, or until fully set.
  7. Garnish with fresh berries or mint leaves just before serving.

Tips & Variations

  • For extra texture, fold in 1 cup of drained crushed pineapple or diced strawberries.
  • Substitute lime gelatin and lime zest for a lime-flavored fluff.
  • Make individual parfaits by layering fluff with fresh fruit or graham-cracker crumbs.
