Tortilla Burgers (Smash Burger Tacos)
Ingredients:
1 lb ground beef (80/20 preferred)
8 small flour tortillas
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon smoked paprika
8 slices American or cheddar cheese
1 cup shredded lettuce
1 cup diced tomatoes
1/2 cup sliced pickles
1/4 cup diced red onion
2 tablespoons vegetable oil
For the special sauce:
1/2 cup mayonnaise
2 tablespoons ketchup
1 tablespoon yellow mustard
1 tablespoon pickle relish
1/2 teaspoon sugar
Salt to taste
Directions:
In a small bowl, mix mayonnaise, ketchup, mustard, relish, sugar, and salt until smooth. Refrigerate until ready to use.
Divide the ground beef into 8 equal portions and gently flatten each into a thin patty slightly larger than the tortillas.
Season both sides of each patty with salt, pepper, garlic powder, and smoked paprika.
Heat a large skillet or griddle over medium-high heat and add vegetable oil.
Place a tortilla in the skillet, then immediately place a beef patty on top and press firmly with a spatula to smash it into the tortilla.
Cook for 2-3 minutes until the beef is deeply browned and crispy on the edges.
Flip the tortilla-burger and place a slice of cheese on the beef. Cook for another 1-2 minutes until the tortilla is lightly crisp and the cheese is melted.
Remove from the skillet and top with lettuce, tomatoes, pickles, red onion, and a drizzle of special sauce.
Fold in half like a taco and serve immediately while hot and crispy.
