3 tbsp honey 🍯
2 tbsp apple cider vinegar (or lemon juice 🍋)

🥔 For the Potatoes:
1 ½ lb (700 g) baby potatoes, halved
3 tbsp olive oil 🫒
1 tsp garlic powder 🧄
1 tsp paprika 🌶️
1 tsp dried thyme or rosemary 🌿

1️⃣ Roast the Potatoes
🔥 Preheat oven to 425°F (220°C).
🥔 Toss halved baby potatoes with olive oil, garlic powder, paprika, thyme/rosemary, salt, and pepper.
🧑🍳 Spread on a baking tray lined with parchment paper.
⏱️ Roast for 25–30 minutes, turning halfway, until golden and crispy.
2️⃣ Prepare the Honey Beef
🥩 Pat beef dry and season with salt and black pepper.
🔥 Heat olive oil in a skillet over medium-high heat.
⏱️ Sear beef 3–4 minutes per side (for medium-rare) or to your preferred doneness.
🍽️ Remove beef and let rest while making the sauce.
3️⃣ Make the Honey Sauce
🧄 In the same pan, reduce heat to medium. Add garlic and cook for 30 seconds.
🍯 Stir in soy sauce, honey, vinegar/lemon juice, and Dijon mustard. Simmer 2–3 minutes until slightly thick.
