1️⃣ Yogurt Cake
Ingredients
πΎ 1 1/2 cups all-purpose flour
π 1 cup white sugar
π§ 1/2 cup softened butter
π₯ 2 eggs
π₯ 1/4 cup plain yogurt
π° 1 teaspoon baking powder
π§ 1/4 teaspoon salt
πΌ 1 teaspoon vanilla extract
Instructions
Preheat oven to 175°C (350°F) and line a pound cake pan with parchment paper.
Cream the butter and sugar until light and fluffy.
Add the eggs one at a time, beating well after each addition.
Add the yogurt and vanilla extract and mix well.
Mix the flour, baking powder, and salt together.
Gradually add the dry ingredients to the wet ingredients and gently fold them in.
Pour the batter into the prepared pan and bake for approximately 45–50 minutes.
Let it cool completely before slicing.
2️⃣ Castilla Sponge Cake
Ingredients
π₯ Four eggs
π Two-thirds cup white sugar
πΎ Half a cup cake flour
π₯ Three tablespoons milk
π§ Two tablespoons butter
Method
Preheat the oven to 160°C (325°F) and line a rectangular baking pan.
Mix the eggs and sugar over a double boiler until the sugar dissolves.
Beat with a whisk until the mixture lightens and triples in volume.
Sift the cake flour and gently fold it in.
Melt the butter and milk together, then add them to the batter and gently fold it in.
Pour the batter into the prepared pan and bake for 40–45 minutes.
Cover the cake in plastic wrap once it has cooled and let it rest overnight.

3️⃣ Banana Cake
Ingredients
πΎ 1 1/2 cups all-purpose flour
π 1 cup white sugar
π§ 1/2 cup softened butter
π₯ 2 eggs
π 3/4 cup mashed bananas (about 2 bananas)
π° 1 teaspoon baking powder
⚗️ 1/2 teaspoon baking soda
π§ 1/4 teaspoon salt
πΌ 1 teaspoon vanilla extract
Instructions
Preheat oven to 175°C (350°F) and prepare a cake pan.
Mash the bananas and set aside.
Cream the butter and sugar until light and fluffy.
Add the eggs and vanilla extract.
Mix together the flour, baking powder, baking soda, and salt.
Alternatively add the flour mixture to the mashed bananas until just combined.
Bake for 50–55 minutes and let cool.
4️⃣ Lemon Cake
Ingredients

π 1 cup white sugar
π§ 1/2 cup softened butter
π₯ 1/4 cup sour cream
π₯ 3 eggs
π 2 tablespoons lemon juice
π 1 tablespoon lemon zest
π° 1 teaspoon baking powder
π§ 1/4 teaspoon salt
Method
Preheat oven to 175°C (350°F) and grease a cake pan.
Cream the butter and sugar together until light and fluffy.
Add the eggs one at a time.
Add the lemon juice, zest, and sour cream.
Sift together the flour, baking powder, and salt, and gradually add them to the batter.
Bake for 45–50 minutes.
For the glaze, mix powdered sugar with a little lemon zest and drizzle over the cooled glaze.
