Ingredients

    1 sheet puff pastry (thawed)

    1 cup fresh spinach (chopped) or ¾ cup frozen spinach (thawed and drained)

    4 oz (half a block) cream cheese, softened

    ½ cup shredded mozzarella or cheddar cheese

    1 garlic clove (minced)

    1 small onion (finely chopped, optional)

    1 egg (for egg wash)

    ¼ teaspoon salt

    ¼ teaspoon red chili flakes (optional)

    1 tablespoon butter or oil (for sautéing)

Instructions


    Preheat your oven to 400°F (200°C) and line your baking sheet with parchment paper.

    Heat butter or oil in a pan over medium heat. Add the chopped onion and cook until soft and fragrant.

    Add the minced garlic and sauté for another 30 seconds.

    Stir in the chopped spinach and cook until wilted. If using frozen spinach, ensure all excess water has been squeezed out before you add it to the pan.

    Remove the pan from heat and allow the mixture to cool for a few minutes.

    In a mixing bowl, combine the softened cream cheese, shredded cheese, salt, black pepper, and chili flakes. Mix until creamy.

    Add the cooled spinach mixture into the cheese mixture and combine thoroughly.

    Place the puff pastry sheet on a lightly floured surface. Roll it gently if you want slightly thinner layers.

    Cut the pastry into 9 or 12 equal squares depending on your preferred size.

    Add 1–2 teaspoons of the cream cheese spinach filling into the center of each square.

    Bring all four corners of each pastry square toward the center and pinch to seal. You can also fold them into triangles if you prefer a different shape.

    Transfer the filled puffs to the baking sheet, leaving space between them so they can puff properly.

    Beat the egg in a small bowl and brush a thin layer over each puff for a golden finish.

    Bake for 15–18 minutes or until the puffs are golden, crispy, and fully risen.

    Remove from the oven and let them cool slightly before serving.

Tips or Serving Suggestions

Serve these puffs warm for the best texture and flavor. Pair them with ketchup, garlic mayo, or a light yogurt dip.
Add finely chopped chicken or mushrooms for a heartier filling.
If preparing for a party, make the filling ahead of time and assemble just before baking.
