Chef’s tip for finger-licking crispy fries


 

Start by cleaning and washing the potatoes.
Then, and this is an essential step, cut them carefully.

For a perfect cut, preferably use a mandoline or a slicer.

If you don’t have one, use a sharp knife to cut medium slices.

a maximum of one centimeter thick. Each slice is then cut into sticks.

Plunge the fries into a bowl of cold water.

Leave them like this for 20 minutes to eliminate excess starch.

Then take them out and dry them with a clean cloth.

Next, pour a generous layer of oil into the pan.

Heat up and add the potato sticks.

Leave them like this for about 5 minutes, until they are golden brown.

Feel free to add a few cloves of garlic.

This will make them even tastier! Remove them from the pan, place them on paper towels, and let them cool slowly
before returning them to the very hot oil. A few minutes is all it takes.

Look at them and you’ll already notice the well-balanced gilding.

Place them on paper towels to absorb the excess oil. Your fries will be tender inside and crispy outside.

Peanut oil or any other light vegetable oil is ideal
