 **Cheesy Ground Beef and Rice Casserole**

**Ingredients:**
- 1 pound ground beef
- 1 onion, diced
- 2 garlic cloves, minced
- 1 cup long-grain white rice (uncooked)
- 2 cups beef broth
- 1 can (14.5 ounces) diced tomatoes, drained
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 cups shredded cheddar cheese
- 1/2 cup sour cream

**Instructions:**

 

1. Preheat the oven to 350°F (175°C) and grease a 9x13-inch baking dish.

2. In a large skillet, cook the ground beef, onion, and garlic over medium heat until browned. Drain any excess fat.

3. Stir in the rice, beef broth, diced tomatoes, Italian seasoning, salt, and pepper. Bring to a boil, then reduce the heat to low. Cover and simmer for 15-20 minutes or until the rice is tender and the liquid has been absorbed.

4. Remove the skillet from heat and stir in the sour cream and half of the shredded cheddar cheese.

5. Transfer the mixture into the prepared baking dish and top with the remaining cheese.

6. Bake for 25-30 minutes or until the cheese is melted and bubbly.
