Ingredients:
1 cup all-purpose flour
1/4 cup powdered sugar
1/2 cup cold butter, cubed
2 large eggs
1 cup granulated sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
2 teaspoons lemon zest
1/4 cup fresh lemon juice
Additional powdered sugar for dusting
Thin lemon slices for garnish
Directions:
Mix flour and powdered sugar in a bowl. Cut in butter until crumbly. Press onto the bottom of a greased mini muffin pan to form a small crust.
Bake at 350°F (175°C) for 10-12 minutes until lightly browned.
Whisk eggs, granulated sugar, baking powder, salt, lemon zest, and lemon juice. Pour over crusts.
Bake for 10-15 minutes until filling is set.
Cool in pan on wire racks. Dust with powdered sugar and garnish with lemon slices before serving.
