  • ½ cup unsalted  butter, melted
  • ¼ cup granulated sugar

 Cheesecake Layer

  • 8 oz (225 g)  cream cheese, softened
  • ⅓ cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice (optional, for a fresh tang)

Blueberry Filling

  • 2 cups fresh or frozen blueberries
  • 2 tbsp granulated sugar
  • 1 tbsp cornstarch
  • 1 tsp lemon zest
  • 1 tbsp lemon juice

Crumb Topping

  • 1 cup all-purpose flour
  • ½ cup brown sugar, packed
  • ½ tsp ground cinnamon
  • ½ cup cold unsalted butter, cubed

Instructions

Step 1: Prepare the Crust

  1. Preheat oven to 350°F (175°C).
  2. Mix graham cracker crumbs, melted butter, and sugar in a bowl.
  3. Press the mixture firmly into the bottom and up the sides of a 9-inch springform pan or deep pie dish.
  4. Bake for 8–10 minutes until lightly golden. Let cool slightly.
  5. Step 2: Make the Cheesecake Layer

    1. In a mixing bowl, beat the softened cream cheese until smooth.
    2. Add sugar, egg, vanilla extract, and lemon juice; beat until creamy and lump-free.
    3. Pour the cheesecake mixture evenly over the cooled crust.

Step 3: Prepare the Blueberry Filling

    1. In a small saucepan, combine blueberries, sugar, cornstarch, lemon zest, and lemon juice.
    2. Cook over medium heat for 5–7 minutes, stirring until the mixture thickens and the blueberries release their juices.
    3. Spoon the blueberry mixture evenly over the cheesecake layer.

Step 4: Make the Crumb Topping

    1. In a separate bowl, whisk together flour, brown sugar, and cinnamon.
    2. Cut in the cold butter with a fork or pastry cutter until the mixture forms coarse crumbs.
    3. Sprinkle the crumb mixture evenly over the blueberry layer.

    Step 5: Bake the Pie

    1. Bake for 40–45 minutes, or until the top is golden and the edges are set.
    2. Remove from oven and let it cool completely at room temperature.
    3. Chill in the refrigerator for at least 3 hours (overnight is even better!) before slicing.

    Optional Garnish Ideas
