Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken:
    • Pat chicken breasts dry with paper towels.
    • Rub olive oil evenly over each breast.
    • Season generously with Cajun seasoning, salt, and pepper on both sides.
  2. Cook the chicken:
    • Preheat oven to 400°F (200°C).
    • Heat an oven-safe skillet over medium-high heat.
    • Sear chicken 3–4 minutes per side until golden brown.
    • Transfer skillet to oven and bake 12–15 minutes, or until internal temperature reaches 165°F (74°C).
    • Remove chicken and set aside; keep skillet with drippings on the stove.
  3. Make the Alfredo sauce:
    • Reduce heat to medium, add butter to the skillet.
    • Once melted, sauté garlic 30 seconds until fragrant.
    • Pour in heavy cream; stir and bring to a gentle simmer.
    • Whisk in Parmesan cheese until sauce is smooth and thickened (2–3 minutes).
    • Season with salt and pepper to taste.
  4. Assemble and bake:
    • Return chicken breasts to the skillet, spooning sauce over each.
    • Sprinkle mozzarella evenly on top.
    • Place under the broiler 2–3 minutes until cheese is bubbly and lightly golden.
  5. Garnish and serve:
    • Remove from oven and let rest 2 minutes.
    • Sprinkle chopped parsley over the chicken.
    • Serve hot, spooning extra sauce from the pan over each plate.
