I choose skin on because it tastes amazing and makes the chicken extremely juicy.As with any meat cooked on the bone.
For 1kg Chicken:
Chicken Marinade:
INGREDIENTS:
1kg chicken (thighs and drumsticks with skin)
1tbsp white pepper powder
1 tsp salt
1&1/4cup butter milk/laban or mix 1cup full fat yoghurt+1cup water
METHOD:
in a large bowl add all the ingredients &mix well. keep in the refrigerator for at least 3-4 hr or overnight.
For coating
INGREDIENTS:
4cups crushed cornflakes
1/4cup+2bsp all purpose flour
1tsp black+1tsp white pepper powder
1tbsp red chilli powder (add chilli flakes if want more spicy)
salt 1tsp
chicken stock pieces crushed (4 cubes)
1tbsp onion powder
1tsp oregano
1tsp garlic powder
1tsp ginger powder
1tbsp paprika powder

METHOD:
preheythe oven at 250c for 20-25min.
i an wide vessel crush cornflakes (don’t grind) add all the dry spices , flour and mix well.
now take a marinated chicken piece &wipe off the excess buttermilk and coat with the cornflakes mixture.make sure chicken is completely covered and coated well.
coat all the chicken piece.
line the coated chicken pieces on the wire rack(Don’t put the pieces on baking tray).
bake at 250c for 40-45min serve hot enjoy.
