Ingredients:
2 medium zucchinis, chopped into small cubes (about 2 cups)
1 medium red onion, thinly sliced into half rings (about 1 cup)
1 large carrot, peeled and grated into thin strips (about 1 cup)
1 red bell pepper, sliced into thin strips (about 1 cup)
1 yellow bell pepper, sliced into thin strips (about 1 cup)
3 cloves of garlic, finely chopped
Salt, to taste
Paprika, to taste
Directions:
Heat a large skillet over medium heat. Add a splash of oil and sauté the red onion until translucent, about 2-3 minutes.
Add the zucchini, carrots, red bell pepper, yellow bell pepper, and garlic to the skillet. Stir well to combine all the ingredients.
Cook the vegetables for about 5-6 minutes, stirring occasionally, until they are tender but still have a slight crunch.
Season with salt and paprika, adjusting the amounts to suit your taste.
Remove from heat and serve hot as a delicious and healthy alternative to pizza!
