Classic homemade strawberry cheesecake


 3 packages (8 ounces) cream cheese, softened
1 cup granulated sugar
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
1 teaspoon vanilla extract
4 large eggs
1/4 cup sour cream
1/4 cup all-purpose flour
2 cups fresh strawberries, sliced

Preheat oven to 160°C (325°F) and grease a 9-inch springform pan.
In a bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture firmly into the bottom of the prepared pan.

In a large bowl, cream together the cream cheese, 1 cup of sugar, and vanilla extract until smooth. Add the eggs, one at a time, beating well after each addition.
Stir in the cream cheese and flour mixture until well combined.
Pour the cream cheese mixture over the prepared crust.
Bake for 45-50 minutes, until the center is almost set and the edges are lightly browned.

Arrange sliced ​​strawberries on top of the cooled cheesecake.
Heat the strawberry jam in a saucepan over low heat until smooth and runny.
Brush the strawberries with the strawberry jam to coat them.

Before serving, refrigerate the cheesecake for at least 4 hours or overnight.
