Tutti Frutti Loaf Cake
Ingredients:
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup brown sugar, packed
2 large eggs
1 teaspoon vanilla extract
1/2 cup plain yogurt or milk
1 cup tutti frutti (candied mixed fruits)
1/2 cup chopped nuts (optional)
Directions:
Preheat oven to 350°F (175°C). Grease and line a 9x5-inch loaf pan with parchment paper.
In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
Beat in eggs one at a time, followed by vanilla extract.
Alternate adding the flour mixture and yogurt (or milk) to the butter mixture, starting and ending with flour. Mix until just combined.
Gently fold in tutti frutti and nuts, if using.
Pour batter into the prepared loaf pan and smooth the top.
Bake for 50–60 minutes or until a toothpick inserted into the center comes out clean. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
