Here’s how to make it:

Mash the banana
Mash the banana in a bowl until it’s almost smooth (a few small lumps are fine). -
Add the eggs
Crack the eggs into the same bowl and whisk together with the banana until well combined. -
Cook as pancakes or scrambled eggs

For pancakes: Heat a non-stick pan over medium heat. Lightly grease with oil or butter. Pour small circles of batter into the pan. Cook for 1–2 minutes on each side until golden brown.

For scrambled eggs: Pour the mixture into the pan and cook like scrambled eggs, stirring gently until set.
