Moroccan Purslane Salad (Bakoula)

 

A healthy, flavorful dish made with fresh purslane,  olive oil, and spices – often served as a side with

Ingredients:

  • 2 bunches of fresh purslane ( bakoula), washed

  • 3 tbsp

  • 2 cloves

  • 1 tsp paprika

  • 1 ts

  • ½ tsp salt (to taste)

  • ½ tsp cayenne pepper or chili powder (optional

  • Juice

  • ½ cu

  • 2 tbsp chopped fresh

  • Instruction

    1. Prepare the Purslane

      • Wash the purslane thoroughly to remove

      • Remove thick stems, chop the leaves and tender

    2. Cook the Greens

      • In a pot, bring water to a boil and blanch the purslane for 10 m

      • Drain

    3. Seaso

      • In a pan, heat the  olive oil. Add garlic, cumin, paprika, salt, and cayenne. Stir for 1 minute.

      • Place


    ✅ Serve warm or at room temperature with Moroccan bread.
