chicken and potatoes


Ingredients:

1 whole chicken cut into pieces (or thighs/breasts as you prefer)

6 potatoes, cut into large cubes

4 garlic cloves, minced

2 onions, sliced

1 tsp rosemary (or thyme)

1 tsp paprika

½ tsp black pepper

½ tsp ground ginger

Salt to taste

3 tbsp olive oil

Juice of ½ lemon

Preparation:

In a large bowl, mix olive oil, garlic, lemon juice, and all the spices with salt.

Add the chicken pieces and coat them well with the marinade. Let it rest for at least 1 hour.

In a baking dish, spread the potatoes and onions, then place the marinated chicken on top.

Bake in a preheated oven at 200°C (390°F) for about 1 hour, until the chicken is golden and the potatoes are tender.
