Smoked Sausage & Potato Bake

 

Ingredients

  • 1 package Eckrich skinless smoked sausage, sliced

  • 8 Yukon Gold potatoes, quartered

  • 1 green bell pepper, diced

  • 1 yellow bell pepper, diced

  • 2 tablespoons butter, cut into small cubes

  • 2 teaspoons olive oil

  • 1 teaspoon oregano

  • 1 teaspoon basil

  • ½ teaspoon black pepper

Heat your oven to 375°F (190°C).

Step 2 – Assemble

In a large baking dish or roasting pan, arrange the sausage slices, quartered potatoes, and diced peppers. Dot the top with butter cubes, drizzle with olive oil, and sprinkle with oregano, basil, and black pepper.

Cover the dish with foil and bake for 40–50 minutes, or until the potatoes are tender and golden.

Step 4 – Serve
