* 1 tablespoon all-purpose flour

* 1/2 cup shredded cheddar cheese
* 1/4 cup shredded Monterey Jack cheese
* 1/4 cup shredded mozzarella cheese
* Pinch of garlic powder
* Pinch of onion powder

Instructions:**
**Bake the Potatoes:** Preheat your oven to 400°F (200°C). Wash your potatoes thoroughly and pat them dry. Prick each potato a few times with a fork to let steam escape. Rub the potatoes with olive oil and sprinkle with salt and pepper. Place them directly on the oven rack or on a baking sheet and bake for 50-60 minutes, or until they are tender when pierced with a fork.
2. **Make the Cheesy Sauce:** While the potatoes are baking, let's make our delicious cheese sauce. In a small saucepan, melt the butter over medium heat. Whisk in the flour and cook for about 1 minute, stirring constantly, until it forms a smooth paste (this is called a roux).

6. **Assemble and Serve:** Once the potatoes are baked and tender, carefully slice them open lengthwise, being careful not to cut all the way through. Fluff the inside with a fork. Spoon the generous seafood and cheese mixture over the top of each potato.
7. **Garnish (Optional):** Sprinkle with a little fresh chopped parsley if you like for a touch of color and freshness.
