Mayo Parmesan Chicken

Ingredients
- 4 boneless, skinless chicken breasts (about 6–8 oz each)
- ½ cup mayonnaise (plain or light)
- 1 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- ½ teaspoon smoked paprika (or sweet paprika)
- ½ teaspoon dried oregano or Italian seasoning
- Salt and freshly ground black pepper, to taste
- 1 tablespoon olive oil
- Chopped fresh parsley, for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C). Lightly grease a baking dish or line it with parchment paper.
- Pat the chicken breasts dry with paper towels. Season both sides lightly with salt and pepper.
- In a medium bowl, combine mayonnaise, grated Parmesan, garlic powder, paprika, oregano, and a pinch of salt and pepper. Stir until smooth.
- Place the chicken breasts in the prepared baking dish. Drizzle each breast with a little olive oil and rub to coat evenly.
- Using a spatula or spoon, spread the mayo-Parmesan mixture evenly over the top of each chicken breast, creating a thick crust.
- Bake in the preheated oven for 20–25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the topping is set.
- Optional: Switch the oven to broil on high and broil for 2–3 minutes, watching carefully, until the cheese topping is golden brown and bubbly.
- Remove from the oven and let the chicken rest for 5 minutes before serving. Garnish with chopped fresh parsley, if desired.

- Serve over a bed of steamed vegetables or mixed greens.
- Pair with roasted potatoes, rice pilaf, or garlic bread.
- A squeeze of lemon juice over the top brightens the flavors.
Tip: For extra crunch, stir 2 tablespoons of panko breadcrumbs into the mayo-Parmesan topping before spreading over the chicken.
