 Magic Custard Cake

One Simple Batter, Three Delightful Layers

Magic Custard Cake is just as magical as its name suggests. With only a few basic ingredients and minimal effort, this recipe effortlessly creates three distinct layers: a silky custard bottom, a luscious creamy middle, and a light, airy sponge topping. It’s an elegant dessert that feels fancy but is surprisingly easy to make.

Ready to whip up some kitchen magic? Let’s get started!

Ingredients

  • 4 large eggs (room temperature)

  • 1¼ cups granulated sugar

  • ½ cup unsalted butter, melted

  • 1 cup all-purpose flour

  • 2 cups lukewarm milk

  • 1 teaspoon vanilla extract

  • A pinch of salt

Optional twists:

  • Add 1 teaspoon lemon zest for a bright citrus note

  • Stir in 1 tablespoon cocoa powder to create a chocolate version

  • Swap all-purpose flour with gluten-free flour for a GF-friendly cake

  • Use plant-based milk and vegan butter to make it dairy-free

Directions

Directions

1. Prep the Oven and Pan
Preheat your oven to 325°F (160°C). Lightly grease a 9×9-inch baking dish or line it with parchment paper.

2. Separate the Eggs
Carefully separate the egg yolks into one bowl and the whites into another.

Whisk the Yolks
Beat together the egg yolks, sugar, and vanilla until the mixture is pale and smooth. Slowly pour in the melted butter while whisking until combined.

4. Incorporate Flour and Milk
Sift in the flour gradually while stirring. Slowly add the lukewarm milk, mixing until you have a smooth, pourable batter.

. Beat the Egg Whites
Add a pinch of salt to the egg whites and whip them until stiff peaks form. This step is key for that fluffy sponge layer on top!

6. Fold Whites into Batter
Gently fold the whipped egg whites into the batter in three parts. The batter will look thin and slightly lumpy—that’s perfect!
